Apple Cinnamon Chia Seed Pudding

What a wonderful weekend so far, we’ve accomplished a lot at home, relaxed, and got in a little shopping. Today I’ve been buzzing around the house, tackling laundry, and getting some play time in the kitchen. As much as I love my smoothies for a fast, well round breakfast on work mornings, I’ve been playing with raw breakfast options on weekends since I have more time to prepare it. I adore apples – they’re tasty, cheap, filling, and versatile. I usually eat one a day, so we decided to add an apple tree to our yard awhile back. It’s currently blooming like crazy!

It has more apples on it than leaves I think and I’m wondering if the poor little tree can support all these!

I hope it can for this chia seed pudding recipe. Apple cinnamon is one of my favorite flavor combos and who says I can only enjoy it for fall? I was going for a raw version of apple cinnamon oatmeal with this one and it works … thankfully. :-)



You could also puree the apple more in the blender, but I liked the texture with the fresh apple chunks.

It actually looks a lot like oatmeal too.

The cinnamon flavor is nicely blended throughout and the crisp apple added a nice crunch while the chia seeds gave it a fun, tapioca-like texture.

Currently I’m buying this 3 lb. bag of chia seeds from Amazon and it lasts a long time, months for me. And it’s much cheaper Whole Foods and other local health food stores, about half the price per pound. Perfect way to stock my pantry for chia seed puddings and smoothies.

    I’ve never tried a chia pudding, but I do like them on my yougurt in the mornings :)

    yes i used to make chia seed pudding all the time. vanilla or chocolate, for sure :) but need to try your cinny version and i love that you use truvia. i used to buy it, but lately just use nunaturals stevia but it’s nice to see someone other than me actually post about truvia and use it! I thought i was the only one!

    and since i installed my API key/aksimet, no more spam today…knock on wood.

      I use a lot of liquid stevia too for smoothies and other desserts, Truvia is easier for recipes like this. There is some conflicting health info on it, so I don’t use a lot of it. You could easily use liquid stevia on this recipe too.

      So glad Akismet is working for you, I got so tired of always updating spam lists before it.

    That pudding looks so good. I usually just mix chia seeds into overnight oats, I’ve never had them by themselves.
