What a wonderful weekend so far, we’ve accomplished a lot at home, relaxed, and got in a little shopping. Today I’ve been buzzing around the house, tackling laundry, and getting some play time in the kitchen. As much as I love my smoothies for a fast, well round breakfast on work mornings, I’ve been playing with raw breakfast options on weekends since I have more time to prepare it. I adore apples – they’re tasty, cheap, filling, and versatile. I usually eat one a day, so we decided to add an apple tree to our yard awhile back. It’s currently blooming like crazy!
It has more apples on it than leaves I think and I’m wondering if the poor little tree can support all these!
I hope it can for this chia seed pudding recipe. Apple cinnamon is one of my favorite flavor combos and who says I can only enjoy it for fall? I was going for a raw version of apple cinnamon oatmeal with this one and it works … thankfully. :-)

Apple Cinnamon Chia Seed Pudding
- 3/4 cup nut or seed milk (I used homemade hemp milk)
- 1 apple, chopped
- 2 tbsp. chia seeds
- 1/2 tsp. cinnamon
- 2 packets of stevia
Place milk, apple, cinnamon and stevia into a high speed blender and blend on low until ingredients are well mixed and the apple chunks are chopped, but not pureed into the mixture for a chunky texture. Pour mixture into a bowl and stir in chia seeds. Let sit for 15-20 minutes stirring occasionally and enjoy. Makes 1 serving.
You could also puree the apple more in the blender, but I liked the texture with the fresh apple chunks.
It actually looks a lot like oatmeal too.
The cinnamon flavor is nicely blended throughout and the crisp apple added a nice crunch while the chia seeds gave it a fun, tapioca-like texture.
Currently I’m buying this 3 lb. bag of chia seeds from Amazon and it lasts a long time, months for me. And it’s much cheaper Whole Foods and other local health food stores, about half the price per pound. Perfect way to stock my pantry for chia seed puddings and smoothies.
