… closer to Friday! And Halloween weekend! A weekend packed with handing out (not eating) candy, watching horror movies and getting out to see family. Thinking of horror movies, Saw VI actress Jon Mack is a raw foodie and has some interesting insights on eating on the road. That’s a huge thing for me too, there aren’t many restaurants offering raw cuisine options or even well-rounded vegan options. I can’t go to Subway with co-workers on lunch break and feel like I’ve gotten a good lunch. It seems every restaurant we go to now pressures us to fill out a comment/feedback card and maybe I should start and request more raw vegan options on the menu.
Nearly 2 weeks of smoothies for breakfast and I’m feeling good and that I’m doing what I can to stay healthy while reports of co-workers with the swine flu are trickling in. I’m also going through 2+ Clorox wipes a day in my cube, can’t be too careful. This morning I loaded my smoothie with more spinach and berries, I like the texture raspberries and blueberries add and see this as a sweet dessert treat more than a healthy breakfast.

I had a butternut squash and another huge cucumber to use up for dinner, so I got experimenting again and created:
Recipe: Butternut Curry Dressing
Summary: Butternut and curry come together in a rich dressing.
- 1 cup butternut squash chunks
- 1 tbsp. curry powder
- 1 tsp. coconut oil
- Blend ingredients in a blender and mix with salad.
