My cold is doing much better, I can talk … mostly and am only dealing with a minor throat tickle and stuffy head. I’ll take it over yesterday! And I think our wonderful weather today has helped, sunny and in the 80s. That almost makes up for raining all last week.
It’s safe to say I’m addicted to sprouts, I always have at least two batches growing in my kitchen and some in the fridge. Currently I have lentils, quinoa, buckwheat groats and alfalfa growing for loading salads and smoothies. Sprouted buckwheat grouts are my favorite for now with their slightly nutty flavor and crunchy texture, but I adore most sprouts and will continue this addiction during the summer for sure!
My lunch salad was packed with them and dressed with dill hemp sauce and sauerkraut, yum!
Since the weather was so perfect, I had to take advantage of the afternoon sunlight and take the dog for a long walk with my camera and telephoto lens of course. :-) Spring officially arrives here when I see poppies blooming and there are plenty around here.
I love that our subdivision has beautiful nature trails, wild animals and farmland in walking distance. And I have to enjoy it while I can because as soon as the economy picks up more, builders already have plans to turn it all into a “planned” community. Sigh. I got entranced watching a couple of wild male turkeys work hard to impress the ladies today.
Then squabble over them.
And get all puffed up again. They’re gorgeous, aren’t they? Why don’t human guys do this for us?
And on the way back, I watched some cows peacefully graze their field, eating and drinking.
Absolutely perfect weather and I loved the heat and being able to wear flip flops for the walk.
Shortly after, it was time to start working on dinner and I was still craving curry. It’s been over a week since I’ve done any grocery shopping, I’ve had no interest in coughing my way through a grocery store with this cold. So my fresh produce and fridge is pretty bare and I’m using up my frozen stash. That made tonight’s dinner interesting. I decided to follow the twins basic socca recipe adding a carrot, coconut oil and a tablespoon of curry powder for curry socca and blending the batter in the Vita-Mix.
I poured it in a greased pie dish and baked for 40 minutes at 350 degrees.
The end result looked perfect, nice crust on the top and not burnt.
Of course I had to sample a piece while preparing the rest of dinner – nice curry flavor with a mild carrot sweetness, could have used a touch more salt though.
Frozen artichoke hearts are a freezer staple here because they’re tasty, easy to enjoy raw or cooked and a great source of protein and fiber.
I sauteed them with chopped onion, cauliflower, green curry paste, grated ginger and minced garlic.
For an interesting curry dinner combo. It was tasty and spicy, perfect for my stuffed head.

I have never grown my own sprouts, but I really want to. I know it’s probably easy, but I am still a bit intimidated by it, lol. Maybe if I keep seeing yours I’ll get some courage. :)
Love the animals! We have wild turkeys around our subdivision, but they don’t look like those. Ours are smaller and less feathery.
I don’t really care for curry, but then again, I haven’t really had much of it to know! I need to brand out, be more adventurous. ;)

Sprouts are a little intimidating, but easy once tried and so much better and cheaper than the ones at Whole Foods. Start small with jar, screen and rubber band and soak some seeds or dried lentils in water for a couple of hours. Then drain and rinse out the jar twice daily. In 4 days, you should have your first batch of sprouts.
Yum, curried Indian and Thai food is probably my favorite ways to enjoy curry.

Your influence on me (and my bank account) continues. As you know, I’m awaiting my Vita-Mix delivery. In the meantime, this week, I have received a new shipment of hemp seeds (in bulk) and Kristen’s hemp recipe book. Oh, and the new Canon Rebel T3 (the entry-level $600 version) and the two lenses you recommended. Um, could you go on vacation and not post for a few weeks???? Just kidding!!!! :)

Thanks! :-) My tray sprouter is great for letting buckwheat groats grow into 1″+ green shoots and they’re really tasty that way.
So cool about your Vita-Mix, I was so excited when I got mine. Hemp seeds are great, I love being able to store them in the freezer to use as I need them.
Congrats on the camera, that’s awesome! The telephoto lens is becoming my favorite for outdoor shots while the macro is perfect for food shots.

Oh yum.This sounds wonderful. I love curry and mixing that with the chickpea flour- great combination! And I’ll take some roasted cauliflower and artichoke hearts any day.
So I have some sprouted buckwheat waiting to be made into some raw creation… any suggestions?

For sprouted buckwheat, I just like mixing them into salads soaked in creamy dressing. They add a nice contrasting crunchy texture and nutty flavor.

glad youre feeling better. the sprout salad dish looks lovely…so refreshing on this warm 80 degree day. i love curry. i think its best when paired with coconut flavors too.
