Raw Pancake Experiment

I was going through one of Jennifer Cornbleet’s books yesterday looking for recipes when my husband said jokingly, “Is there a raw recipe for pancakes?” Not in Jennifer’s book, so to Google I went and found this one. I got the nuts and dates soaking before bed yesterday to try today. Problem is I don’t have a juicer or food processor yet, just an abused KitchedAid blender, so I had to improvise the recipe a bit:

Raw Pancakes:

  • 3/4 cup almonds, soaked
  • 4 dates, soaked
  • 1 apple, chopped
  • 3 carrots, shredded
  • 1/2 cup flax seed, ground

Blend first four ingredients in blender until well chopped.

Add flax seed and blend thoroughly into mixture.

Spread mixture onto dehydrator try.

Dehydrate at 105 degrees for about 8 hours flipping once, I just flipped the fruit leather tray and put the dry side down on the grate.

Flip onto a cutting board after 8 hours and slice as desired.

I sliced mine like a pizza and had pancake/cookie wedges. The flavor was good, mild, fresh and would easily go with blueberries or fruit sauce. Next time I will add raw honey an maybe vanilla and cinnamon to make pizza cookies. Overall, the experiment was successful, the “cakes” are moist and would probably make a good snack for kids.
