Well happy Tuesday-though-Friday-would-be-better! Today dragged a bit, I woke up with a scratchy throat that insisted on annoying me most of the day. But I did get a larger monitor at work, replacing my old 19″ with a 20″ wide so now I’m running 2 wide screen monitors and am already spoiled! It’d be more fun if I didn’t have to aggressively use both monitors all day. :-P But, I had to move my beloved sticker collection on my old monitor.
I usually eat a piece of fruit at my desk if I need a snack and have been decorating my old monitor with produce stickers. What should I do with them now? Randomly stick them on co-workers phones and monitors? That’s what I was thinking too. :-)
I spoiled myself with a wonderful lunch at Whole Foods today, check this masterpiece I had in the beautiful sunny weather.
Greens, kale, corn, jicama, tomatoes, bulgar and quinoa – yum, and very filling. After, I browsed the store a bit thinking I might pick up another metal bottle for water and smoothies. But, I was a bit saddened to see the newest SIGG bottles are made in China instead of Swiss made like my current one. And Klean Kanteens are labeled as “Made responsibly in China”. So I opted to make do with the ones I have for now.
When I got home from work, I ended up spending a lot of time in the kitchen creating and not cutting my finger thanks to this:
I dug up the mesh cutting glove my mom gave me to keep my bandaged finger dry and not have a repeat incident of last week. Anyway, I had to try Ani’s Cauliflower Mash with Mushroom Gravy. But I figured I’d need a side with more protein to go with it and opted for broccoli with a creamy hemp seed sauce, I used the Vita-mix twice and the food processor once and spent 30 minutes in the kitchen! But the end result was worth it.
I’ve never tried processing cauliflower with avocado or pureeing fresh mushrooms into raw gravy and they were great! I highly recommend trying Ani’s recipe and you could steam the cauliflower mash if you’d rather not go raw. Now I think I’m going to let hubby handle dinner tomorrow night. :-)
