Finally Saturday! Yesterday started off roughly after waking up to find my sliced finger flooded the bandage tomb with blood and was very painful … and I have a pretty high pain threshold. My finger continued to bother me at work for the first half of the day, if I bumped it, spikes of pain shot through my chest making me a cranky girl.
I ate a quick packed lunch of leftovers in my car before heading to Target to stock up on bandages, pet food and other random stuff.
I hate running a lot of errands after work, but don’t mind cramming them into my lunch break because I’m weird like that. When I got back to work, my finger started feeling much better thanks to a better band aid solution, so my nerves were less rattled for pain pikes.
After work, hubby and I took my mom to Paul Martin’s American Bistro for an early Mother’s Day dinner since she works on Mother’s Day. A great dinner and two glasses of wine did wonders after a crappy day. :-) I got their 3 mushroom pesto burger.
The burger patty was a solid blend of beautiful mushrooms, it was absolutely amazing! I’m not a huge mushroom fan, especially of overcooked cheap ones. But this was the most creative mushroom burger I have ever had, even hubby loved it and my mom swore she was ordering it next time after trying it. Prior to going vegan, I would have ordered some sort of salmon and I guarantee that while good, it would not have been as amazing or creative as this.
Anyway, for lunch today, I tried Gena’s Broccoli Hummus.
It was also great, a unique texture twist to hummus and great way to eat raw broccoli. It was easy to toss the ingredients into my food processor and quick – I highly recommend it!
I hope everyone is having a great weekend so far!

Isn’t it amazing how a few glasses of wine can turn a day around? :-)
I am also a vegetarian and my body has never been in a very good shape. Being a vegan can really make you much heathier.’**
Christine OMG That finger looks/sounds horrible!! Finger cuts/injuries are the WORST. They throb and ache and are slow to heal b/c of all the handwashing. I suffer from eczema on my fingers which manifests in the form of skin cracks, not rashes and I am always having to put bandaids on them so I totally wince for you :)
“I’m not a huge mushroom fan, especially of overcooked cheap ones. But this was the most creative mushroom burger I have ever had”…
Amen to the 1st and woo-hooo to the 2nd part!
