Dijon Rosemary Dressing

Almost Friday and that’s a good thing, I’m looking forward to a fun weekend. And we have a new episode of Big Bang Theory and 30 Rock waiting for us, woohoo! I had these two handsome guys waiting for dinner earlier this evening.

And decided to create another salad dressing to go with a huge salad using one of my favorite flavors – Dijon mustard. And a sprig of fresh rosemary, an interesting flavor combo that worked well to brighten up a fast salad.

As you’ve probably figured, I never get tired of blender hemp seed recipes! They have the creamy and rich texture of a ranch dressing or other dairy-loaded non-vegan processed dressings, but are a good source of protein and omegas.

I coated a simple salad of lettuce, chopped tomatoes, and apples for the dressing.

And fried some curry eggplant rounds to go with the salad by throwing a quick mixture of chickpea flour, curry powder, salt, and turmeric together, dipping raw eggplant rounds into it, and pan-frying them in a couple of tablespoons of coconut oil for about 2 minutes a side.

My relatively simple dinner was served, the eggplant came out great. But the dressing was the star of the meal with a tangy and rich flavor from the Dijon and a fresh and slightly spicy kick from the garlic and rosemary.

And it was a simple dressing to throw together in minutes by dropping fresh ingredients into the Vitamix container.
