Simply Cheesy

Yesterday was a great day even though I didn’t get to do all that I wanted to do. We went to a fabulous backyard birthday party for a couple of friends were hubby’s band played an amazing set, so proud of him! I spent the afternoon racing around the house catching up on chores, charging camera batteries, and preparing food for the party. Not sure how many vegan options would be there, I whipped up a zucchini, carrot, and hemp seed salad and a quinoa and lentil dish. Turns out there were plenty of other options and I got time to enjoy a plate full with a glass of wine before being the band photographer.

I never get tired of looking at a plate of fruits and veggies. :-)

I had a blast snapping pics of the guys playing getting many good shots.

But I got a bit carried away managing to snap over 600 pictures, yikes!

The weather was absolutely perfect, cool with a nice breeze and such a welcome change after weeks of dry heat!

Such a wonderful evening, but too bad it was on a Sunday night because I was ready to stay later sipping wine and enjoying the gorgeous backyard.

I finally made it to Trader Joe’s to stock up for the week after work today and discovered something in the chilled foods section – Medjool dates!

And much cheaper than Whole Foods, somehow I never new they carried these!

After a crazy weekend and long day at work, I wasn’t ready to put a lot of effort into dinner. I whipped up a simple cheesy hemp sauce to coat a tempeh salad that came out very nice with a creamy, rich, and versatile flavor.

Like my lazy attempt at a salad? Spinach and chopped tomatoes, it’s a Monday. :-)

I also mixed sauteed tempeh cubes into the salad to make it a meal salad.

The sauce was perfect for the salad coating the crunchy veggies and crispy tempeh with a silky savoriness.

The curry was present, but not too strong adding warmth to the flavor.

Now I must get back to sorting band pictures in Lightroom! :-)
