Smokey Curry Avocado Dressing

At least it’s not Monday anymore, right? That’s the most positive thing I can come up with today and I apologize because I’m feeling pretty fried. There’s a fun little stomach bug ripping through our department that I may have caught partially or am still trying to fight it off because I’ve been feeling tired and sore the last two days. But it was nice to come home this this content and friendly face.

Who was hamming it up for a little attention. And dinner.

Feeding two hungry dogs is our usual first order of business after work, but then I get to feed myself and with a new creamy avocado dressing.

The color of the dressing is a vibrant shade of chartreuse. Or maybe a canned peas?

But the rich and creamy texture coated the salad smoothly.

The flavor came out slightly different than I expected, in a good way. The curry flavor is present, but mild and not overpowering. And it has slightly smokey flavor with hints of nutmeg and other Fall flavors. For a simple ingredient list, it has a lot of flavor depth.

The dressing is thick enough to be a dip or even a sandwich spread.
