Yesterday was a nightmare, I felt like I got shot in the stomach most if the day and still recovering today. After a lengthy doctor’s appointment, turns out I had a bladder infection that was starting to wreak havoc on my kidneys, not fun! A day into antibiotics and I’m starting to feel human again. Smoothies, popcorn, and this heavenly stuff hubby picked up for me helped get me through the day.
Vanilla Island Coconut Bliss and what a treat it is! Coconut truly makes great ice cream and the rich vanilla and coconut flavors with such a smooth texture make this flavor just amazing for being “just” vanilla. If you need a decadent splurge, try it!
Sitting home for a day nonfunctional yesterday felt like an eternity when daytime TV sucks and nothing was grabbing me on NetFlix. I ended up watching No Strings Attached with was just okay, kind of flat with an annoying ending. See the better version of this movie instead, Friends With Benefits.
Today my stomach and general abdomen area aren’t 100% yet, so I was craving something simple and easy on the digestive system for dinner which usually means a raw soup or smoothie. Tonight it was soup and the theme ingredient was cucumber since I bought a huge pack of them at Costco that needed to be used up quick after being sick for two days. Since hemp seeds are my other favorite raw soup ingredient, I experimented and the result was good!
The Raw Project
Cucumber Hemp Soup
- 1 cup of chopped cucumber
- 1/4 cup of shelled hemp seeds
- 1 tbsp. of lime juice
- 1 tsp. chili powder
- 1/4 tsp. salt
- pinch of pepper
- 1/4 cup of cilantro leaves
- 1/4 cup water, as needed
- 1 chopped roma tomato for garnish
Place all ingredients except the tomato into a high speed blender and blend to a creamy texture. Top with tomato and serve. Makes 1 large serving or 2 small. You can chill the soup in your fridge or freezer for 30 minutes to server super cold, perfect for a hot summer evening.
Cucumber skin can sometimes be bitter, but also packs a lot of vitamins. You can skin the cucumber first or partially skin it if you think bitterness will be a problem, it didn’t bother me.
The soup has a nice spicy kick from the chili powder and the tomato adds a nice texture to it.
While we were enjoying our soup, a sneaky little guy was enjoying cat food.
