Three day weekends are fabulous, it’s like we get two Saturday nights. And I’ve been utilizing the long weekend to relax and spend time with hubby and our pets after such a busy week. I guess I didn’t realize how busy last week was because it was nice to disconnect for a couple of days while I catch up on chores, shop, and work in some leisurely workouts at home. Leela is more than happy to tell my when my time in the gym is up and she needs attention.
And I worked in a 4-mile run as I rev up training for a half marathon at the end of April. That’s actually been part of my stress this week too because I signed up for a running/fundraising team the company I work for created and learned shortly after that I need to fund raise a minimum amount of money before running the half. Team members also need to solicit donations for a non-profit foundation and I’m not a marketing/social butterfly-type that’s good at selling a cause, so this is way out of my comfort zone. That’s good I guess and I’m going to try since I signed up for it, but it’s gonna add a bit of stress to my training! I decided to not focus on that this weekend, but instead focus on relaxing before starting my fundraising campaign next week. Procrastinating already, that can’t be good.
Miko has been enjoying plenty of relax time too this weekend bundled with us while we caught up on a little movie watching.
The movie Paul is hilarious and Super is very intense and well written.
And we had a lovely dinner out Friday night, hubby surprised me with reservations to Crush 29 for wine and my favorite vegan pizza and flat bread hummus appetizer, a fabulous way to start a long weekend!
Saturday we kept things simple too picking dinner from Whole Foods while loading up for the week. My usual fully loaded salad was wonderful with the cilantro chutney dressing.
But I decided to make it fancier with a candlelight and a glass of wine.
There seems to be a lot of glasses of wine this weekend, but that’s okay.
Tonight’s simple dinner was a somewhat flop, I decided to roast the Romanesco cauliflower that came in our farm box with tofu chunks and other veggies.
I tossed the tofu and veggies in a huge bowel with olive oil, balsamic vinegar, salt, and TJ’s 21 Seasoning Salute.
Before baking them on a grid for 35 minutes at 350 degrees.
The flavors were wonderful, but the texture of the cauliflower and potatoes weren’t – a little too crunchy and under cooked, whoops!
Still good dipped in hummus, but not as good as they could have been. I probably should not have used the great and roasted them at a higher temp – next time!
Dessert made up for this – VitaChoice Dark Chocolate with Crystallized Ginger.
A very curious, but wonderful flavor combo. I got a flavor pack of VitalChoice chocolate from my sister for Christmas and have been slowly making my way through the bars and this one is my favorite so far.

that sounds like a fabulous weekend. and 3 dayers are the best. oh if only we had the every week. i would gladly work 4 10’s (uh i already work 12 hr days!) to trade for 3 days off. love how you spent it. my fav way too-wine, pups, good food, and a handsome hub and oh yes a run!
